PECORINO ABRUZZO DOC

Shaman Pecorino Bianco 100 years is the result of a project created in collaboration with prof. Alberto Palliotti, of the University of viticulture and oenology of Perugia. Scion material was sourced from a century old Pecorino vine located at about 900 s.l.m. from a one hundred year old vine on the Umbrian Apennines (still “naturally supported” by an ancient mountain maple tree, as was used in the past). This material was then grafted to rootstock of an old vineyard within our Estate, in Pietranico.
A year later the first grapes were harvested, fermented and aged in new oak barrels. Producing a fascinating white wine with a unique expression of Pecorino.
From a visual point of view the wine has an intense amber colour typical of the indigenous variety, Shaman Bianco reveals all the vibrant nuances of nature warmed by the sun and of the history that accompanies this ancient vine. The nose surprises with its intense perfumes, ranging from green to the white floral notes. The incomparable balance of aromas are to be discovered and savoured on the palate, where we find the pronounced extract of this wine. The complex structure and the marked acidity offer a persistent and inimitable taste and allows for the wine to age for a very long period. Shaman Pecorino is a long-lived wine. Its limited production requires that a few bottles should to kept in the private cellar to be to open in a few years time.
The thinning techniques, the manual harvesting of the grapes, the fermentation and the long aging period in oak barrels complete the essence of this wine.
