The excellence of sparkling wines in Rosarubra winery is finally expressed in Khaos, a unique product whose amazing freshness and elegance is given by a long charmat metod.
A special bottle with 10 months of maturation on yeast, obtained with a strict control of the temperature and the fermentation process.
With its fine perlage, the flavor by mouth reveals elegant acidity, sensations of wild flowers and toasted bread, with notes of honey and ripened fruit.
Special cru located out of Tenuta Rosarubra, Pietranico (PE)

Manual selection of the grapes coming from a well exposed vineyard. The terroir granting these vines thermal excursion that together with the optimal grassing techniques permanently used in our company gave to this wine an abundance of floral scents as well as a strong reminder on the fruit.
The wine is made exclusively in stainless steel tanks thermo-conditioned at a temperature of 12°C.
The sparkling process consist in a long charmat method. After the inoculation with yeast, Khaos continues its maturations in autoclave for 10 months. After that period, it is bottled in an isobar environment.
