The excellence of sparkling wines in Rosarubra winery is expressed in Khaos. From a base of Cerasuolo of Abruzzo this unique product is born performed with a long charmat method brought to 10 months of maturation on yeasts.
The wise control of the wine making process, together with the optimal management of the temperatures, hands this sparkling wine to have an unusual freshness of the primary aromas and an elegant and excellent perlage. In the taste it surprise its freshness, the notes of red fruits and toasted bread.

Manual selection of the grapes coming from a well exposed vineyard. The terroir granting these vines thermal excursion that together with the optimal grassing techniques permanently used in our company gave to this wine an abundance of floral scents as well as a strong reminder on the fruit.
The wine is made exclusively in stainless steel tanks thermo-conditioned at a temperature of 12°C.
The sparkling process consist in a long charmat method. After the inoculation with yeast, Khaos continues its maturations in autoclave for 10 months. After that period, it is bottled in an isobar environment.
